This heirloom hard red winter wheat is the wheat the made Kansas the Wheat state. Originally brought from Turkey to Kansas via Ukraine by Mennonites, this flour is fantastic in all of your yeast bread! The protein ranges from 12-15% depending on which harvest we mill!
